Brown Lentils

Whole lentils are the dried seeds of cultivated plants belonging to the species *Lens esculenta Moench* (*Lens culinaris Medic*) of the Leguminosae family. Whole lentils, also known as brown lentils, are larger and rounder grains compared to split lentils. Whole lentils retain their hulls and have a longer cooking time, maintaining their shape better during cooking. They are typically brown in color. Whole lentils are larger, round, and smooth grains that cook slowly and retain their shape during cooking. Lentils should have a characteristic taste and odor, and be high in protein and fiber with a low fat content. They must not be soaked or re-soaked and should not appear moldy to the naked eye. Lentils must be free from common vetch (*Vicia sativa*) and, consequently, should not contain B-cyanoalanine. Furthermore, lentils must be free from live insects or animal residues
